Do you ever just need a taste of childhood? I do, and crispy chicken tenders were one of my favorite things to eat fresh out of the oven and dipped in a spicy barbecue sauce! The ones we would eat would always come out of a big bag in our freezer and had tons of less than healthy ingredients in them=( This recipe is delicious, crunchy, flavorful, clean eating friendly and a little spicy! I hope you enjoy them!
Paleo Coconut Chicken Tenders
2 lb organic boneless skinless chicken breast, cut into strips or chicken tenders
3/4 cup almond meal
3/4 cup unsweetened finely shredded coconut (or 1/4 cup more almond meal)
1 teaspoon smoked sweet paprika
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder 1 teaspoon onion powder
1 teaspoon sea salt
1/2 teaspoon black pepper
Preheat oven to 400°.
Place almond meal, coconut, and all seasonings into a medium sized shallow bowl and stir to combine.
Crack the egg into another shallow bowl and whisk thoroughly.
One at a time, dredge each chicken tender in the egg bowl, wiping off any access and then dip each into the almond/coconut/spice mixture. Roll until each tender is covered completely. Place the coated tenders on a wire rack that fits on a baking sheet. Bake for 20 minutes, gently flipping the tenders once at the 10 minute mark. When done, the chicken tenders will be golden brown and completely cooked through. Remove tenders from the oven and allow to cool slightly before serving. Serve with your favorite barbecue sauce or dipping sauce of choice.
