We have been having some really warm weather here in Los Angeles and it has taken me from warm soup and chili mode back into cool crunchy salad mode practically overnight. I have always wanted to make the salad dressing that you get at Japanese restaurants on top of iceberg lettuce and carrots and dang it I think I nailed it. This dressing is full of fresh organic ginger, carrots, scallions, vinegar and clean oils so you can feel good about enjoying it. It is great on romaine lettuce, baby spinach, sliced red cabbage, and carrots. It tried it on kale and I didn’t like it so much..not sure why. Of course you can try iceberg but there is pretty much no nutritional value in that kind of lettuce so stick with romaine! Enjoy.
Makes 1 ½ cups
10 small/medium carrots peeled and chopped in half (my carrots were purchased at the farmers market this week and were tender and vibrant yellow! If you make yours with orange ones your dressing will be orange!)
2- 2 inch long and 1 inch wide pieces of fresh organic ginger peeled and chopped in half
1/3 cup organic seasoned rice wine vinegar
3 tablespoons of coconut aminos
4 scallions cleaned and trimmed and chopped in half-use the whole scallion
1 teaspoon toasted organic sesame oil
1 tablespoon raw local honey
½ cup avocado oil
1 teaspoon sea salt
*Always use organic locally sourced ingredients as much as possible. Remember, the food you make will only be as good as the ingredients you use. I don't want to eat pesticides, herbicides, or processed chemicals and I would love it if you would limit your exposure as well.

Combine all ingredients in a high powered blender and blend on high until smooth. Toss with fresh greens and vegetables of your choice. Dressing keeps for about one week in the refrigerator.
