This delicious grilled chicken recipe is a staple in our house. It makes a perfect summer meal as the main dish along side some grilled veggies and a nice salad. Be sure to squeeze the grilled citrus halves over your chicken right before you dig in! It’s so yummy!
1 4-5lb organic chicken cut into eighths
1 ½ cup fresh orange juice
½ cup fresh lemon juice
½ cup fresh lime juice
2 tablespoons of olive oil
8 garlic cloves, minced
2 tsp minced fresh rosemary
2 teaspoons kosher salt
2 oranges, halved
2 lemons, halved
2 limes , halved
A handful of freshly chopped parsley
Cut the chicken into eighths, here is a tutorial if you want to see it done. Combine the 3 fresh citrus juices, chopped garlic, minced rosemary, olive oil, and salt in a large bowl and stir well to dissolve the salt. Add chicken to marinade and let it sit overnight (up to 24 hours) in the refrigerator.
Remove the chicken from marinade 1 hour before cooking and bring to room temperature (tempering meat ensures a more even cooking time). Season chicken on both sides with salt and pepper.
Grill the chicken over medium heat until it reaches 160 degrees, move to a platter and tent with foil and allow it to rest for 15 minutes. While the chicken rests, grill the citrus halves cut side down until caramelized and charred. Serve the grilled chicken pieces with the citrus and sprinkle with freshly chopped parsley. Serves 4-6.
