I fell in love with Chimichurri sauce way back when Trader Joes had the pre-made sauce in the refrigerated section. I would buy a container every week and put it on everything, Seriously, I did..chicken, fish, steak, shrimp; it made everything better and I wasn't a very good cook at the time so it covered a multitude of over cooked meat sins. I was majorly bummed out when they stopped carrying it so I decided to make my own! I must say, mine is better! Chimichurri Sauce is a traditional South American condiment used for grilled meats and is different based on where you eat it but is always loaded with fresh herbs, spices, and olive oil. It's perfection on grilled flank steak but it’s delicious on any meat, seafood, grilled veggies, and I have even used it as a salad dressing and it was amazing! Health tip: the cilantro and parsley are very detoxifying, they literally pull toxins from the body and are loaded with antioxidants. The garlic is antibacterial and antiviral and the olive oil is loaded with healthy monounsaturated fatty acids so it is very nourishing, healing, and delicious.
1 1/2 cups fresh organic cilantro leaves
2 cups fresh organic parsley leaves
½ cup fresh organic oregano or 2 tablespoons dried
8 loves garlic
1 organic red fresno chili or 2 tsp dried chili flakes (hot peppers are on the dirty dozen list so be sure to buy organic!)
¼ cup fresh lemon juice
1 1/4 cup red wine or white wine vinegar
2 cups olive oil
Salt and Pepper
Add the cilantro, parsley, oregano, garlic, chili, and shallot to the bowl of a food processor (or chop each ingredient thoroughly by hand) and chop finely. Put chopped ingredients into a large bowl, add vinegar, lemon juice and season with salt and pepper, stir well and let it sit for 5 minutes. Whisk in olive oil and let sit at room temperature for at least 30 minutes before serving to let the flavors come together. Put this deliciousness on everything!
