This salad is delightful! I know a few people who don’t love arugula due to its slight bitterness, but when I make this salad they say that the sweetness of the dates and the tang of the lemon vinaigrette balance it very well. It’s a perfect and very simple salad.
7oz fresh arugula, approx. 7 cups
7 dates, pitted and quartered
¼ tsp lemon zest (organic is best)
¼ cup freshly squeezed lemon juice-about 2 medium sized lemons
1 tsp raw honey
½ cup olive oil
½ tsp sea salt
½ tsp freshly ground pepper
Rinse and dry arugula well, add chopped dates. For the vinaigrette: pour lemon juice and lemon zest into a bowl, add honey, salt, and pepper and whisk together until salt and honey are dissolved. Drizzle in the olive oil slowly while whisking to emulsify. Add dressing to salad and toss to coat, serve immediately.
